Spinach & Potato Pie
Pastry
200g of OO Flour
1/2 teaspoon Salt
2 Tbs Olive Oil
1/2 cup or 125 ml Cold Water
Place all ingredients in Bowl, Knead with a dough hook for 1 – 2 minutes cover with a clean dry tea towel and rest for 30 minutes.
Filling
2 Bunches of Spinach ( chopped )
500g Potatoes (peeled and cubed, boiled until soft not mushy) ( cool )
100g grated Tasty Cheese
1/2 Onion ( chopped )
1 Egg
Combine all ingredients in a bowl.
2 Tb of Oil for brushing the top of the pie before baking.
Divide pastry in two pieces roll on a floured ( sprinkle flour ) baking paper surface
until you have two large circles the size of a large dinner plate.
Place one pastry on a lined round tray and place the filling on top more in the middle.
Spread leaving at least a 4 cm around the sides.
Cover the with the second pastry circle and turn sides and pinch to seal edges.
Brush with oil and prick with a fork , place in the middle of oven.
Bake at 225 deg or a hot oven for approx. 25 to 35 mins keep watch as it will brown quickly.
